A wonderfully located rural pub in the Chilterns with the front garden affording a lovely view of the rolling hills, fussing farmers and wandering wildlife. As mentioned below there are three distinct areas inside after entering through the porch, with most of it given over to dining though drinkers can imbibe on the left-hand side. Décor notes - red and black chequerboard tiled floor, exposed brick, inglenook fireplace, brasses. Having been forewarned that the beer quality was ‘variable’ I was prepared for the two Brakspear ales on gravity…and inevitably my Hooray was flat and not overly enjoyable (ever heard of a hard spile?). It's worth a visit for the location for sure, but it isn’t anywhere in the league of a true rural gem like the Bell at Aldworth.

You can almost forgive Brakspears for closing their brewery when they continue to keep some of the country's finest rural pubs. The William is one of those gems, at the end of a single track road in the tiny hamlet of Hailey high up in the Chilterns. It has changed over the years: the previous landlord had a fascinating collection of old farm implements inside and larger equipment outside in what is now the car park. The beer was on gravity stillage behind the bar and became rather soupy on hot summer's days. There was no draught lager, the food was just the basic ploughman's lunches and rolls.

When Brian died things of course changed, but not alarmingly so. The farming stuff went, of course. Lager pumps were sadly installed. The beer is remains on gravity stillage, but now cooled properly and very palatable even on the hottest of days, though sadly reduced in range. It is a lot foodier now, but not oppressively so. There are three distinct areas: to the left a comfy section around a large fireplace, very welcoming in winter, another seating area to the right and a more restauranty bit further on. All very traditional if a little sanitised nowadays. Outside there's tables on a lawn and more across the road commanding one of the finest views of rural England you could wish for.

It is, or course, a popular destination for walkers and cyclists, and is well worth a detour for anyone passing through the area.
